Gingerbread men! Perfect holiday treat that your whole family will enjoy

Ingredients

1 gingerbread man cookie cutter

·   1.5 cups 1 to 1 gluten free flour (bob’s red mill)

·   2 tsp cinnamon

·   1 tsp ground ginger

·   1/2 cup coconut sugar

·   1/2 tsp baking soda

·   Pinch of sea salt

·   1 egg, whisked

·   5 tbsp vegan butter

·   3 tbsp organic black strap molasses

·   1 tbsp maple syrup

·   1 tsp vanilla extract

Directions

Preheat oven to 350 F

·   Line 2 baking trays with parchment paper

·   In a large bowl, mix together all dry ingredients

·   Then add in whisked egg and vegan butter & mix together well

·   Then add in molasses, maple syrup & vanilla. Mix well (I used my hands which was easier). The dough will be thick and a bit sticky. Transfer dough to parchment paper and then take another piece of parchment place and place on top of the dough

·   Using a rolling pin, roll out dough into a big rectangle (the dough shouldn’t be too thick and not too thin either)

·   If you’re having a hard time rolling it and it’s sticking, put dough in freezer for 5 minutes & then take out

·   Slowly remove the top layer of parchment paper

·   Dip your gingerbread man cutter into gf flour and then use it to cut out shapes (jiggle it back and forth), but do not remove yet

·   Place entire baking tray in freezer for 10 minutes

·   Remove from freezer and slowly peel the dough from around the cookie cutters (I used a knife to help. Repeat process with the remaining dough

·   Put the cut outs in the freezer again (I kept mine on the baking tray) for 5 minutes (this helps keep their shape during baking)

·   Then put the baking trays in the oven and bake for 8-9.5 minutes - 8 minutes will be a softer gingerbread and 9.5 mins will be a crunchier cookie

·   Let them cool completely- do not touch so you don’t mess up their shape

·   Once completely cooled, add your icing (I used simple mills)
