Ingredients
· 2 cups paleo flour
· 1 tsp baking powder
· 1/2 tsp baking soda
· 2 tsp cinnamon
· 1/2 tsp ground ginger
· 2 cups carrots, grated
· 2 eggs
· 1 tsp vanilla extract
· 1/4- 1/3 cup maple syrup (If you prefer sweeter, use 1/3)
· 1/2 cup unsweetened apple sauce
· 1/4 cup coconut oil, melted
Directions
Preheat oven to 350 F
· Line cupcake liners or spray muffin tray
· In a large bowl mix together all dry ingredients
· In a medium bowl mix together all wet ingredients
· Stir wet into dry
· Place muffin mixture in each cupcake liner
· Bake for 30 minutes
