NN Famous Banana Bread
The best gluten, grain and dairy free banana bread you've ever had. Seriously you have to make this ASAP.
Ingredients
2-3 overripe bananas (depends on size, if they’re large bananas I use 2, if they’re on the smaller size, I’ll use 3)
· 1/4 cup pure maple syrup
· 1/4 cup coconut oil, melted
· 2 tbsp unsweetened almond milk
· 2 eggs
· 2 cups paleo flour OR 2 cups almond flour (see options below for NUT FREE and VEGAN option)
· 1 tsp baking soda
· 1 tsp baking powder
· 1/2 cup vegan mini chocolate chips
Directions
· Preheat oven to 350 F
· Spray a loaf pan or line with parchment paper
· In a small bowl, mash bananas and set aside
· In a large bowl, mix together all dry ingredients (except chocolate chips)
· In a medium bowl, mix together all wet ingredients including mashed bananas
· Transfer wet ingredients into dry and mix well
· Mix in chocolate chips
· Pour mixture into loaf pan and top with extra chocolate chips
· Bake for 45 minutes
· Let cool for 5 minutes and then transfer to cooling rack & dig in!
SUBSTITUTIONS:
to make this recipe:
*vegan= sub eggs for 2 flax eggs (mix 2 tbsp ground flax + 6 tbsp water and let sit until gel like)
*nut free= sub almond milk for coconut/regular milk & sub paleo/almond flour for whole wheat or 1 to 1 gluten free
