Banana Chocolate Chunk Muffins
Chocolate chunk banana muffins!

Ingredients
· 2 cups paleo flour or 2 cups almond flour or 2 cups 1 to 1 gluten free flour
· 1 tsp baking powder
· 1 tsp baking soda
· 2 over ripe bananas
· 1/4 cup maple syrup
· 2 eggs OR 2 flax eggs
· 1/2 cup vegan chocolate chunks
· 1/4 cup avocado oil or coconut oil, melted
Directions
· Preheat oven to 350 F
· Spray muffin tin with avocado/coconut spray
· In a small bowl, mash bananas
· In a large bowl, mix together all dry ingredients (except chocolate chunks)
· In a medium bowl, mix together all wet ingredients (including flax egg if using vegan option)
· Transfer wet ingredients into dry
· Mix in chocolate chunks
· Place muffin mixture into each muffin tin and fill almost to the top (makes 12 muffins)
· Top with a few extra chocolate chunks
· Bake for 25-30 minutes
