Mini Oatmeal Chocolate Chip Muffins
These little cutie oatmeal muffins are the perfect bite size snack!

Ingredients
· 1 cup rolled thick oats (gluten free is preferable)
· 1 cup almond flour (or 1 cup spelt flour to make it NF)
· 1 tsp baking soda
· 1 tsp cinnamon
· 1/2 cup mini vegan chocolate chips
· 2 eggs
· 1 tbsp coconut oil, melted
· 1/2 cup unsweetened nut/oat/coconut milk
· 1/4 cup maple syrup (if prefer sweeter increase to 1/3-1/2 cup)
Directions
· Preheat oven to 350 F
· Spray mini muffin tray really well (makes 24 muffins)
· In a large bowl, mix together all dry ingredients (except chocolate chips)
· In a medium bowl, mix together all wet ingredients
· Pour wet into dry and mix
· Add chocolate chips
· Fill each muffin tin with the mixture all the way to top (I like to top each mini muffin with a few extra chocolate chips)
· Bake for 15-16 minutes
