Ingredients
· 2-3 over ripe bananas
· 3 eggs
· 1 tsp vanilla extract
· 2 cups paleo flour (Bob's Red Mill)
· 1/2 tbsp cinnamon
· 1/2 tsp baking powder
· 1 tsp baking soda
Optional add in ½ cup vegan chocolate chips
Directions
Preheat oven to 350 F
· Place muffin liners/spray muffin tray
· In a food processor- toss in all ingredients and process until smooth
· Scoop 1/4 cup of the mixture into each muffin tin
· Bake for 15 minutes
· Let cool for 10 minutes
