Almond Crusted Chicken Fingers

Ingredients
- 1 lb Organic Boneless Skinless Chicken Breasts (Ask your butcher to cut into strips!)
- 3/4 Cup Almond Flour
- 1/4 cup chopped almonds OR 1 cup almond flour (if you add the chopped almonds it gets extra crispy)
- 1 tbsp Paprika
- 1 tsp Garlic Powder
- 1 tsp Chilli Flakes
- Pinch of Sea Salt
- 2 Eggs
Directions
- Preheat oven to 350 F
- Place parchment paper on a baking tray
- In a small bowl, whisk 2 eggs
- In a large bowl, mix together all dry ingredients
- Dip each chicken strip in egg mixture and then coat it in the almond flour mixture (continue doing this with each chicken strip) and space them apart on parchment paper
- Bake in oven for 10 minutes
- Remove from oven and flip each chicken finger and then put back in the oven for 9 minutes
- Broil for 1-2 minutes
