Apple Cinnamon Muffins

Ingredients

2 eggs

·   1.5 cups homemade apple sauce (or unsweetened store bought)

·   1 tsp vanilla extract

·   1/4 cup coconut oil, melted

·   1/2 cup pure maple syrup

·   2 cups paleo flour OR 1 to 1 gluten free flour

·   1 tsp baking soda

·   1 tsp baking powder

·   2 tsp cinnamon

 Crumble:·   Mix together 3 tbsp avocado oil, 1 tsp cinnamon, 3 tbsp coconut sugar and 1/3 cup paleo/ gluten free flour

Directions

·   Preheat oven to 350 F

·   Spray muffin tin with avocado/coconut spray

·   In a small bowl, mix together crumble mixture and set aside

·   In a medium bowl, mix together all wet ingredients

·   In a large bowl, mix together all dry ingredients

·   Stir wet ingredients into dry

·   Take mixture and fill each muffin tin until the top

·   Next, top each muffin with a couple teaspoons of the crumble mixture

·   Bake for 35 minutes

·   Transfer to cooling rack and let cool
