Peanut butter chocolate chip chickpea bites

Ingredients

  • 1+1/4 cup canned chickpeas (no added salt), drained and rinsed and patted dry
  • ½ cup natural peanut butter (or your favourite nut butter, just make sure it's all natural!)
  • 2 tsp vanilla extract
  • 1 tsp baking powder
  • ¼ cup raw honey
  • ½ cup dark chocolate chips

Directions

  1. Preheat oven to 375
  2. Process all ingredients in a food processor (except chocolate chips) until smooth
  3. Once combined, add chocolate chips and process for a few seconds
  4. The mixture will be very sticky (that’s normal!)
  5. Place parchment paper on a baking tray
  6. Wet your hands and form into golf size balls and press down a bit so they look like a cookie
  7. Bake for 15 minutes
  8. Turn the tray and bake for an additional 5 minutes (until golden brown!)
