Peanut butter chocolate chip chickpea bites

Ingredients
- 1+1/4 cup canned chickpeas (no added salt), drained and rinsed and patted dry
- ½ cup natural peanut butter (or your favourite nut butter, just make sure it's all natural!)
- 2 tsp vanilla extract
- 1 tsp baking powder
- ¼ cup raw honey
- ½ cup dark chocolate chips
Directions
- Preheat oven to 375
- Process all ingredients in a food processor (except chocolate chips) until smooth
- Once combined, add chocolate chips and process for a few seconds
- The mixture will be very sticky (that’s normal!)
- Place parchment paper on a baking tray
- Wet your hands and form into golf size balls and press down a bit so they look like a cookie
- Bake for 15 minutes
- Turn the tray and bake for an additional 5 minutes (until golden brown!)
