These muffins are very high in protein and fibre which is a perfect, satisfying breakfast or snack. They are not very sweet which I like! This recipe makes 4 muffins which is 1 serving :)

Ingredients

  • 1 scoop chocolate protein powder (I like Genuine Health)
  • 2 tbsp ground flax
  • 1 tbsp coconut flour
  • 2 tbsp raw cacao/unsweetened cocoa powder
  • 1 tbsp cinnamon
  • 1 tsp. baking powder
  • 1/2 or 1 full banana
  • 1/4 cup unsweetened coconut milk
  • 1 egg
  • Small handful of vegan chocolate chips

Directions

  1. Preheat oven to 350 F
  2. Place muffin liners/spray muffin tray
  3. Mix together all ingredients except chocolate chips
  4. Scoop mixture into each muffin tin and top with chocolate chips
  5. Bake for 15 minutes
