These muffins are very high in protein and fibre which is a perfect, satisfying breakfast or snack. They are not very sweet which I like! This recipe makes 4 muffins which is 1 serving :)

Ingredients
- 1 scoop chocolate protein powder (I like Genuine Health)
- 2 tbsp ground flax
- 1 tbsp coconut flour
- 2 tbsp raw cacao/unsweetened cocoa powder
- 1 tbsp cinnamon
- 1 tsp. baking powder
- 1/2 or 1 full banana
- 1/4 cup unsweetened coconut milk
- 1 egg
- Small handful of vegan chocolate chips
Directions
- Preheat oven to 350 F
- Place muffin liners/spray muffin tray
- Mix together all ingredients except chocolate chips
- Scoop mixture into each muffin tin and top with chocolate chips
- Bake for 15 minutes
