Chocolate Chip Cupcake Muffins
The perfect cross between a chocolate muffin and a cupcake-that's why I call this a chocolate chip cupcake muffin!
Ingredients
· 1 1/4 cups paleo flour or almond flour
· 4 tbsp raw cacao powder/ unsweetened cocoa powder
· 1 tsp baking soda
· 2 tbsp avocado oil
· 1/3 cup pure maple syrup
· 1/4 cup unsweetened apple sauce
· 1 egg
· 1/2 cup unsweetened almond milk
· 1/2 cup vegan chocolate chips
Directions
· Preheat oven to 350 F
· Place cupcake liners on muffin tray
· Once cupcake liners are put into muffin tray, spray each cupcake liner
· In a large bowl mix together all dry ingredients except chocolate chips
· In a medium bowl mix together all wet ingredients
· Transfer wet into dry
· Mix in chocolate chips (I leave a few out to sprinkle on at the end)
· Place mixture into each cupcake liner and top with extra chocolate chips
· Bake for 20 minutes
