Almond Crusted Chicken Fingers

Ingredients

  • 1 lb Organic Boneless Skinless Chicken Breasts (Ask your butcher to cut into strips!)
  • 3/4 Cup Almond Flour
  • 1/4 cup chopped almonds OR 1 cup almond flour (if you add the chopped almonds it gets extra crispy)
  • 1 tbsp Paprika
  • 1 tsp Garlic Powder
  • 1 tsp Chilli Flakes
  • Pinch of Sea Salt
  • 2 Eggs

Directions

  1. Preheat oven to 350 F
  2. Place parchment paper on a baking tray
  3. In a small bowl, whisk 2 eggs
  4. In a large bowl, mix together all dry ingredients
  5. Dip each chicken strip in egg mixture and then coat it in the almond flour mixture (continue doing this with each chicken strip) and space them apart on parchment paper
  6. Bake in oven for 10 minutes
  7. Remove from oven and flip each chicken finger and then put back in the oven for 9 minutes
  8. Broil for 1-2 minutes
