Mini Chocolate Chip Cookies

Ingredients

·   2 cups almond flour

·   ¼ cup coconut sugar

·   ¼ tsp baking soda

·   1 egg

·   1 tbsp vanilla extract

·   1/3 cup vegan mini chocolate chips

Directions

·   Preheat oven to 350 F

·   Place parchment paper on two baking trays

·   In a large bowl, mix together all dry ingredients (except chocolate chips) and then stir in wet ingredients

·   Mix well (it may seem like it’s not going to all mix/hold together, but keep stirring)

·   Lastly mix in chocolate chips

·   Using your hands, take cookie mixture and form into a small ball and flatten slightly on parchment paper

·   Repeat, until you’ve made 20 mini cookies

·   Bake for 12-14 minutes
