The OG Carrot Muffins

Ingredients

·  2/3 gluten free oats

·  1.5 cup paleo flour

·  1.5 tsp baking soda

·  1 tbsp. cinnamon

·  2 eggs

·  ½ cup maple syrup

·  ¼ cup coconut oil, melted

·  1 cup grated carrots

·  ½ cup unsweetened apple sauce

· ½ cup unsweetened almond milk

Directions

·  Preheat oven to 350 F

·  Spray muffin tin well

·  In a large bowl, mix together all dry ingredients and then mix in wet ingredients

·  Next fold in grated carrots

·  Place mixture in each muffin tin (fill all the way to the top)

·  Bake for 20 minutes and then rotate pan and bake for additional 5 minutes

·  Place toothpick to check that they are cooked through

· Transfer muffins to cooling rack
